How we make our matcha
Matcha is one of the drinks people come back for at Cafe 295, so here is how we make it.
We start with ceremonial grade matcha, a fine green powder that we whisk with a little hot water until it is smooth and there are no lumps. That step matters. A good whisk is the difference between a bright, clean cup and a chalky one. From there it is your choice: hot with steamed milk, or iced over cold milk on a warm afternoon in Etobicoke. Oat milk works beautifully if you prefer it.
The result is earthy, a little sweet, and gentle on the stomach next to a strong coffee. If you have only ever had matcha from a can, come try it made fresh. We think you will taste the difference.
