The hunt for a coffee worth the name Reserve

When we decided to put our name on a single origin, we knew it could not be just any coffee. It had to be something you cannot find anywhere else in the city. So we went looking, and the search led us to Narino.

Narino sits in the far south of Colombia, where the land folds into the Nudo de los Pastos and the soil turns volcanic. Coffee grown here is different. The altitude is high, the nights are cold, and the cherries ripen slowly. What comes out of that is a bean with real density and a sweetness other regions cannot copy.

We found ours on the farms of Jorge Libardo Diaz, a producer whose family has grown coffee for generations. His washed, double fermented Castillo cups at 86 points, with the flavour of panela, chocolate and a bright citrus finish. We tasted it and knew the search was over.

This becomes the 295 Reserve. Exclusive to Cafe 295, roasted in small batches, arriving late this September. We are making only a limited first release, so we are opening a waitlist for the people who want to be first.
